While each venue offers its own atmosphere and point of view, they are bound by a shared thread: the vibrant flavors and refined techniques born from the culinary legacies of former French colonies. Gregory ran the kitchen at Portland's Departure Restaurant + Lounge for 10 years, leaving in 2019 to focus on opening his award-winning live fire restaurant, Kann.

Architecture & Design
Designed by architect Laura Gonzalez, Printemps New York reinterprets the brand’s Parisian heritage through bold layers of pattern, texture, and material. Bespoke frescoes, hand-crafted stained glass, and custom Art Nouveau–inspired tiles give each space its own character while allowing the store to unfold as a connected, dynamic whole.

“It’s a one of a kind project, it’s a dream project," says Gonzalez, known for her maximalist, warm style. "We drew inspiration from the heritage of Printemps, but this is New York and New York is very special because there are no boundaries here."
